Ingredients

  • 240 ml plant milk
  • 15 ml apple cider vinegar
  • 200 g flour
  • 60 g Dutch cocoa
  • 150 g sugar
  • 80 ml neutral oil
  • 5 ml vanilla
  • 5 g baking soda
  • 3 g salt
  • 120 ml strong coffee, cooled

Steps

  1. Preheat oven to 175 C and line a loaf pan.
  2. Curdle milk with vinegar, whisk dry ingredients, combine wet, fold until smooth.
  3. Bake until center springs back, cool fully before slicing.

Coffee deepens cocoa without tasting like coffee; do not skip the cool-down or the crumb tears.
